I love fruitcakes but because I have a sugar intolerance I do not eat them. This Christmas I really wanted to make one and so I watched several different cookery programs and got a great idea as to how to cook one without the need for any sugar. It was not perfect but it was the best fruit cake that I have ever made. What I did was to chop up some dried apricots and mix them with some sultanas and raisins. I put them in a saucepan and covered them with unsweetened red grape juice and boiled them until the juice had all been absorbed into the fruit. I then took some more sultanas and pulped them up with my food processor and then creamed some margarine in with it. I added some mixed spice (and probably should have added some baking powder) and then mixed the hot fruit in as well. This made the butter separate so I should have probably waited until it was cool. I added some wholemeal flour (which would have been better if it was sieved) and then mixed it all up until it was the right consistency. I put it in a greased and floured cake tin and then baked in the oven slowly at just 120 degrees for several hours. I should have wrapped the tin in brown paper as it did burn just a bit on the sides but on the other hand that did make quite a nice chewy texture. The cake was not as sweet as a traditional Christmas cake as it was obviously missing the treacle, sugar and other sweet things. I thought it was good and my guests were polite and said it was nice and sweet enough but those without a sweet tooth would be likely to have found it sweet enough anyway. I really enjoyed it and will certainly be making more fruit cakes in the future and trying to improve on my recipe.
I don’t know about you, but just after Christmas I always want to have a good tidy up and clear away all of the clutter in the house. We seem to accumulate a lot of things during the course of the year and once we get our Christmas presents on top we seem to be bulging at the sides! I do not like throwing things away though so it can make it quite tricky. I have a lot of things filed away in my garage organization system where I have things boxed up a labelled. It is good for putting things like Christmas decorations, out of season clothes and shoes and things like that. It is getting a bit full though! I tend to go through each room and move everything out and give it a really good clean. Then I put back the furniture, then the other necessities and sort through the bits and pieces making sure that at least some of it does not go back into the room. Most of it gets boxed up in the garage.This means that I cut down some of the clutter but do not feel that I have lost those thinsg forever. In the bedroom I have a good sort out of the wardrobes and empty my bedroom closet organizers sorting through everything and getting rid of anything which is getting worn out. Then put everything back very neatly. I usually manage to sort out a few things for the charity shop as well which is good. I find the whole experience of cleaning through everywhere, very satisfying and it makes the house seem much bigger and more of a pleasure to live in. Then I start to accumulate more things again ready for the next clear out session the following year!

At the moment my thoughts are on property. I am trying to guess what the market might do in the next year. You see I have my eye on one of a selection of beautiful Asheville townhomes and I know that I will need to buy one in the next year in order to ensure that I get one before they all sell out. However, I am trying to pick the best time to sell my current property. I am hoping that property prices may start to rise again and I would like to get the highest price that I can. I have spent a lot of time and effort making my place really attractive. I have decorated every room with a plain design but a few statement features such as furniture or pictures, which I can take with me. This gives potential buyers an idea of what they could do with the room but if they do not like it they will not inherit it. I have made sure that everything is really clean and carefully made sure that the outside looks good too. I have cleaned the front door and windows but also put some inviting plants there and made sure that the front is clean and tidy as it is the first thing that a potential buyer will see. I have been talking to several estate agents about when the right time is to put the property on the market and they are unsure as to what prices are likely to do. I have decided to wait until the new year as people are unlikely to be looking during the holiday season. If I think prices will rise then I will wait a few more months but ideally I want to sell before Easter so that I can get my Real estate in Asheville sorted out before the summer.
My best friend has just come back from her honeymoon. She said that it was a fantastic holiday and the best thing about it were the yacht charters. Her husband had surprised her by hiring a yacht for them to use for a weekend while they were away. She said that the feeling of floating on the ocean was amazing and she had never had an experience like it. She said it was so romantic just being totally on their own and doing nothing but spending time together. Even when they were in their hotel they had to join others for breakfast and when they went out sight seeing there were other people around so she said that the idea of charter yachts was fantastic for just being completely alone together. She said that because it had everything that they needed, they could just wherever they wanted to or stay in one place and enjoy each others company. They did do a bit a scuba diving together but she said that was even more amazing as there was a certain closeness about being the only two people for miles in the water. It made me think that this could be an ideal anniversary present for my husband. I have been trying to think of something really special for out tenth anniversary and I think would be fantastic as we do not get that much time on our own together now that we have children. We love having them and do not like having time apart from them but I think we coudl lose ourselves in each other for a few days on a yacht. I think that I might book it up as a surprise and also organise the babysitting well in advance. I am sure my parents would love to have the children for a weekend.
